I'm finally paying my respects to National Panini Month. After being disappointed by The Sentinel's pork and fig sandwich that didn't actually contain figs, I pressed together a panino before fig season bids its sad farewell. When I came up with the "fruit and nut" idea, I thought: this could be terrible. But this panino turned out to be one of my favorite creations ever.
August is panini season, at least according to Sargento Cheese. I'll buy that, since I love me some panini. The Italian pressed sandwiches are pretty much ubiquitous at this point, as are panini makers. But you don't need a fancy machine to make them. I like to cook mine in the oven, pressing the sandwiches down with a heated cast-iron skillet. Works just as well.

Next week I think I'll celebrate by commandeering the panini press at my office. I am also partial to the appropriately named Panini in the Upper Haight, where they serve a delicious avocado and spinach panino with pepperjack cheese. You wouldn't think that warm avocado would be a good idea, but it's actually quite delicious. Got some good panini ideas? Share 'em below.
